Ingredients:
100 g of quinoa
eggplant
carrot
cucurbit
Cherry tomatoes
parsley
salt pepper
oil
Set the oven to 200 degrees C.
Chop the parsley. Dice the eggplant, squash and carrots, drizzle with olive oil and put into the oven.
After 15 minutes, add the tomatoes and bake for another 10-15 minutes.
Cook the quinoa
Mix the baked vegetables with quinoa and chopped parsley
