Ingredients
2 eggs
1 ripe avocado
2 cucumbers
small lettuce leaves
basil
black olives
lemon juice
salt pepper
Sauce:
1 teaspoon of mayonnaise
2 teaspoons of olive oil
2 teaspoons of mustard
1 teaspoon of honey
Preparation
Cut the boiled eggs into quarters, season with salt and freshly ground pepper. Prepare the sauce by mixing the ingredients in a bowl.
Cut the avocado into pieces, sprinkle with a teaspoon of lemon juice, season with salt and pepper.
Cut the cucumbers into thin slices, sprinkle with salt and a teaspoon of lemon juice. Mix the avocado and cucumber with half of the sauce.
Place the lettuce mixed with the basil on the serving plates. Add cucumbers and avocados, arrange the eggs, sprinkle with the rest of the sauce and sprinkle with slices of black olives.
